  1. Start by grating the carrots into a large mixing bowl.
  2. Dice the apples and add them into the bowl with the grated carrots.

  4. In a separate bowl, whisk together the yogurt or mayonnaise, lemon juice, and a sprinkle of salt and pepper.
  5. Pour this dressing over the carrot and apple mixture.
