Preparation
- Preheat your oven to 400°F and adjust the oven rack to the middle position.
- In a 2-quart baking dish or a cast iron skillet, toss 1 cup of whole cherry tomatoes with olive oil, basil pesto, minced garlic, and season with salt and pepper to taste.
- Bake the tomatoes in the oven for 15 minutes to caramelize them and enhance their flavor.
- While the tomatoes roast, combine sour cream and chopped basil in a bowl. Stir in the mozzarella, provolone, and parmesan cheeses until everything is mixed well.
- Once the tomatoes are done baking, mix in the cheese mixture until fully incorporated.
- Halve the remaining cup of cherry tomatoes and arrange them on top of the cheesy mixture.
- Return the dish to the oven and bake for an additional 20 minutes, until the cheeses are bubbly and slightly golden.
- Before serving, add a sprinkle of fresh basil for extra flavor.
