Method

Preparation
  1. Preheat your oven to 400°F and adjust the oven rack to the middle position.
  2. In a 2-quart baking dish or a cast iron skillet, toss 1 cup of whole cherry tomatoes with olive oil, basil pesto, minced garlic, and season with salt and pepper to taste.
  3. Bake the tomatoes in the oven for 15 minutes to caramelize them and enhance their flavor.
  4. While the tomatoes roast, combine sour cream and chopped basil in a bowl. Stir in the mozzarella, provolone, and parmesan cheeses until everything is mixed well.
  5. Once the tomatoes are done baking, mix in the cheese mixture until fully incorporated.
  6. Halve the remaining cup of cherry tomatoes and arrange them on top of the cheesy mixture.
  7. Return the dish to the oven and bake for an additional 20 minutes, until the cheeses are bubbly and slightly golden.
  8. Before serving, add a sprinkle of fresh basil for extra flavor.

Notes

Caprese Dip is best enjoyed warm with a side of crusty bread, crackers, or tortilla chips. Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F for 10–15 minutes. For longer-term storage, freeze the dip before baking in a freezer-safe container.
