For the batter
  • 1 medium head cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour (or chickpea/rice flour for a gluten-free option) Use chickpea or rice flour for gluten-free
  • 1/2 cup water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
For the sauce
  • 3/4 cup buffalo sauce
  • 1 tablespoon unsalted butter, melted (or vegan butter) Use vegan butter for a fully vegan dish
  • Cooking spray

Method
 

Preparation
  1. Cut the cauliflower into even, bite-sized florets and pat them dry with paper towels.
  2. In a bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, salt, and pepper until you have a smooth batter.
  3. Coat the florets in the batter, ensuring to shake off any excess.
Cooking
  1. Preheat your air fryer to 375°F (190°C) and spray the basket with cooking spray.
  2. Place the cauliflower in a single layer in the air fryer and cook for 12 to 15 minutes, shaking halfway through for even cooking.
  3. While the cauliflower is cooking, combine the buffalo sauce and melted butter in a bowl.
  4. Once the cauliflower is cooked and crispy, toss it in the buffalo sauce until well coated.
  5. Serve immediately, and don’t forget the ranch or blue cheese dip if you’re a fan!
