  • 2 cups rolled oats Old-fashioned oats; do not use instant for best texture.
  • 4 tablespoons chia seeds
  • 3–4 tablespoons brown sugar Adjust to taste.
  • 1 cup mashed banana About 2 ripe bananas.
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 teaspoon cinnamon
  • 2 cups milk Dairy or plant-based (almond, oat, or soy all work).

Method
 

Preparation
  1. Mash the bananas in a large bowl until mostly smooth. Small lumps are fine.
  2. Add the rolled oats and chia seeds. Stir to combine so the chia is evenly distributed.
  3. Sprinkle in the brown sugar, cinnamon, and pinch of salt.
  4. Pour in the milk and vanilla extract. Stir everything until the mixture is fully combined.
  5. Cover the bowl with a lid or plastic wrap. Refrigerate for at least 4 hours, or overnight for best texture.
Serving
  1. When ready to eat, stir the oats well. Adjust sweetness or thickness with a splash of milk or a sprinkle of brown sugar.
  2. Top as desired and enjoy.

Notes
