  • 4 cups fresh corn kernels can also use canned or frozen corn, just make sure to drain and thaw them
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup bell pepper, diced any color for a colorful presentation
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • to taste salt and pepper Consider adjusting the seasonings to preference

  1. Start by placing the corn, cherry tomatoes, red onion, bell pepper, and cilantro into a large mixing bowl.
  2. In a separate small bowl, whisk together the olive oil and lime juice along with a pinch of salt and pepper until well combined.
  3. Pour the dressing over your vegetable mixture. Gently toss everything together until the veggies are evenly coated with the dressing.
  4. Cover the bowl and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld beautifully.
