  • 2 pounds Beef sausage Use mild or spicy beef, or swap turkey sausage for a lighter option.
  • 12 large eggs Can replace a few yolks with egg whites for a leaner bake.
  • 1 cup sour cream Light or regular.
  • 1/4 cup milk Or use half-and-half for a richer texture.
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 pieces green onions Thinly sliced.
  • 1/2 green bell pepper diced
  • 1/2 red bell pepper diced
  • 2 cups shredded cheddar cheese

Method
 

Preparation
  1. Preheat the oven to 350°F and lightly coat a 9x13 inch baking dish with cooking spray.
  2. In a large bowl, whisk the eggs, sour cream, milk, salt, and pepper until combined. Stir in the cheddar.
  3. In a large skillet over medium heat, cook the sausage until browned, breaking it into crumbles. Drain most of the grease and fold into the egg mixture.
  4. Sauté the bell peppers and green onions in the same skillet for 2-3 minutes until softened, then stir them into the bowl.
  5. Gently stir to combine, then pour into the prepared dish and smooth the top.
Baking
  1. Bake on the middle rack for 35-50 minutes, starting to check at 35 minutes for doneness.
  2. The edges should be set and lightly golden, with the center slightly jiggly. Use a thermometer to ensure it reaches 165°F.
  3. Let the casserole rest for 5-10 minutes, slice, and serve warm.

Notes
