- In a large pot, combine the mixed dried fruits and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool.
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Stir in the cooled fruit mixture.
- In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add dry ingredients to the wet mixture until just combined.
- Pour the batter into the prepared cake pan.
Baking
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
