Ingredients
  

Mixed Dried Fruits
  • 1 cup mixed dried fruits (raisins, currants, chopped dates) Use fresh dried fruits for the best flavor.
  • 1 cup water Used to boil the dried fruits.
Cake Batter
  • 1/2 cup unsalted butter Make sure it's soft for easy creaming.
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon You can experiment with different spices.
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large pot, combine the mixed dried fruits and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool.
  2. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Stir in the cooled fruit mixture.
  6. In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  7. Pour the batter into the prepared cake pan.
Baking
  1. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  2. Let cool before serving. Enjoy your cake with a cup of tea!
