Ingredients
  

For the cream layers
  • 8 oz mascarpone cheese Room temperature for easier mixing but briefly chilled for better texture
  • 1 cup heavy cream Cold
  • 1/2 cup sugar Adjust to taste; superfine dissolves faster
  • 1 tsp vanilla extract
For the assembly
  • 1 cup mixed fresh berries Strawberries, blueberries, raspberries, hulled and halved large berries
  • 1 cup ladyfingers
  • 1/2 cup coffee or berry juice For soaking

Method
 

Preparation
  1. Chill your mixing bowl and beaters in the fridge for 10-15 minutes.
  2. Whip mascarpone with cold heavy cream, sugar, and vanilla to soft peaks.
  3. Quickly dip ladyfingers in coffee or berry juice for 1-2 seconds and layer them in a trifle dish.
  4. Spread half of the mascarpone cream and scatter half of the berries.
  5. Repeat with remaining ladyfingers, mascarpone cream, and finish with the remaining berries on top.
Chilling
  1. Cover the trifle with plastic wrap and refrigerate for at least 2 hours.
  2. Serve chilled and garnish with extra berries and mint leaves if desired.
