Ingredients
  

For the vegetable base
  • 2 cups cherry or grape tomatoes
  • 1 medium red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
For the seasoning
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
For the eggs
  • 1 cup chopped baby spinach
  • 4 large eggs
  • to taste chopped fresh basil or fresh chives (optional for topping)

Method
 

Preparation
  1. Preheat your oven to 400 degrees F.
  2. If using ramekins, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese equally among four oven-safe dishes. Alternatively, combine all the veggies in a single oven-safe dish, placing the feta cheese in the center.
  3. Drizzle a tablespoon of olive oil over the veggies and cheese in each dish.
  4. In a small bowl, mix together the oregano, sea salt, thyme, black pepper, and red pepper flakes. Sprinkle this seasoning over the combined dish.
Baking
  1. Bake for 25 minutes until the veggies are tender and the feta is squeaky.
  2. After baking, stir everything to mix the veggies and feta together.
  3. Add the spinach, making small wells for the eggs, and gently crack the eggs into the wells.
  4. Bake again for an additional 10 minutes, or until the eggs are cooked to your desired doneness.
  5. If desired, top with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven at 350 degrees F, covered with foil.
