Preparation
- Preheat your oven to 400 degrees F.
- If using ramekins, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese equally among four oven-safe dishes. Alternatively, combine all the veggies in a single oven-safe dish, placing the feta cheese in the center.
- Drizzle a tablespoon of olive oil over the veggies and cheese in each dish.
- In a small bowl, mix together the oregano, sea salt, thyme, black pepper, and red pepper flakes. Sprinkle this seasoning over the combined dish.
Baking
- Bake for 25 minutes until the veggies are tender and the feta is squeaky.
- After baking, stir everything to mix the veggies and feta together.
- Add the spinach, making small wells for the eggs, and gently crack the eggs into the wells.
- Bake again for an additional 10 minutes, or until the eggs are cooked to your desired doneness.
- If desired, top with fresh herbs before serving.
