Preparation
- Preheat your oven to 400°F (200°C). Grease an 8x11-inch baking dish thoroughly with extra virgin olive oil.
- Place the feta cheese in the center of the prepared baking dish. Crack all 12 eggs around the feta block.
- Drizzle 2 tablespoons of olive oil over the eggs and feta. Season with salt and black pepper.
Cooking
- Transfer the baking dish to the oven and bake for 18-22 minutes until the feta is melted and egg whites around the edges are set.
- Remove from oven and use a fork to scramble the eggs and feta together.
- Serve immediately, scooping into pita or with crusty toast, and garnish with fresh herbs if desired.
