  • 1 block 8-ounce block feta cheese Use feta packed in brine for best results.
  • 12 large large eggs
  • 2 tablespoons extra virgin olive oil Plus more for greasing the baking dish.
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
Serving suggestions
  • to taste Pita bread or crusty toast (optional) Serve with eggs.
  • to taste Fresh basil and/or mint (optional) For garnish.

Preparation
  1. Preheat your oven to 400°F (200°C). Grease an 8x11-inch baking dish thoroughly with extra virgin olive oil.
  2. Place the feta cheese in the center of the prepared baking dish. Crack all 12 eggs around the feta block.
  3. Drizzle 2 tablespoons of olive oil over the eggs and feta. Season with salt and black pepper.
Cooking
  1. Transfer the baking dish to the oven and bake for 18-22 minutes until the feta is melted and egg whites around the edges are set.
  2. Remove from oven and use a fork to scramble the eggs and feta together.
  3. Serve immediately, scooping into pita or with crusty toast, and garnish with fresh herbs if desired.
