Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Season the chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes per side until golden brown. Then, remove the chicken from the skillet.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
- Add the chicken broth, allowing it to simmer for 1-2 minutes.
- Mix in the softened cream cheese until smooth, then stir in the chopped chives. Season with additional salt and pepper to taste.
Baking
- Place the seared chicken breasts in the prepared baking dish and pour the cream cheese sauce over the top. If desired, sprinkle with shredded cheddar cheese.
- Bake uncovered for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- For an added touch, broil for an additional 2-3 minutes to achieve a beautifully browned topping.
- Garnish with fresh parsley before serving.
