Chicken and Dry Rub
  • 2 lbs boneless, skinless chicken breasts (or thighs) Breasts cook faster; thighs are juicier.
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika For a smoky note without grilling.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 cup BBQ sauce, plus extra for serving Use low-sugar BBQ sauce for a lighter finish.

Method
 

Preparation
  1. Preheat the oven to 400°F. Lightly spray a baking tray with nonstick spray or line it with foil.
  2. In a small bowl, whisk together chili powder, smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
  3. Pat the chicken dry with paper towels and rub the spice mixture evenly over both sides.
  4. Arrange the chicken on the prepared tray, leaving space between pieces.
Cooking
  1. Bake uncovered for 20 minutes.
  2. Remove the tray and brush with half of the BBQ sauce. Return to the oven and bake for an additional 5 to 10 minutes.
  3. Check doneness with an instant-read thermometer; 165°F for breasts, 175°F to 190°F for thighs.
  4. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.
  5. Brush with extra BBQ sauce for serving.
