  • 1 cup rolled oats
  • 1 cup almond flour or gluten-free flour Feel free to substitute with preferred gluten-free flour
  • 1/2 cup coconut sugar or brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 1/2 cup unsweetened applesauce Adds moisture and sweetness
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and chopped Fresh apple for added flavor
Optional Ingredients
  • 1/2 cup chopped walnuts or pecans For added crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, mix together the applesauce, vanilla extract, and chopped apple.
  4. Gradually add the wet ingredients to the dry ingredients until well combined. If desired, fold in the nuts.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
