Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, mix together the applesauce, vanilla extract, and chopped apple.
- Gradually add the wet ingredients to the dry ingredients until well combined. If desired, fold in the nuts.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
