Wet Ingredients
  • 1/2 cup unsalted butter, softened Use room temperature for better blending.
  • 1 cup granulated sugar
  • 2 large eggs At room temperature.
  • 2 cups peeled and diced apples Granny Smith or Honeycrisp recommended.
  • 1/4 cup sour cream Can substitute with yogurt.
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon until fully combined.
  3. In a large separate bowl, beat the softened butter with the sugar until the mixture is light and fluffy.
  4. Add the eggs one by one, mixing well after each addition.
  5. Fold in the diced apples, sour cream, and vanilla extract, stirring gently.
  6. Gradually mix in the dry ingredients until just combined—avoid overmixing.
  7. Pour the batter into your prepared loaf pan, smoothing the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
