Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla and yogurt, mixing well.
- Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
- Fold in the diced apples and nuts (if you’re using them).
- Pour the batter into your prepared loaf pan and smooth the top.
Baking
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
