For the Muffins
  • 1.5 cups all-purpose flour For batter
  • 0.5 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons ground cinnamon For batter

  • 1 large egg
  • 0.5 cups milk
  • 0.25 cups unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple) Fresh apples give the best flavor
For the Streusel Topping
  • 0.5 cups all-purpose flour
  • 0.25 cups packed light brown sugar
  • 0.25 teaspoons ground cinnamon For streusel
  • 0.25 cups unsalted butter (cold and cut into small pieces)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir just until moistened; a few lumps are fine.
  5. Gently fold in the chopped apples.
  6. For the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
Baking
  1. Divide the muffin batter evenly among the muffin cups.
  2. Sprinkle streusel topping over each muffin.
  3. Bake for 18-22 minutes, or until a skewer inserted comes out clean.
  4. Let cool in the pan for a few minutes before transferring to a wire rack.
