Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup apple sauce
  • 1 large egg
  • 1 cup diced apples

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, oats, baking powder, baking soda, cinnamon, and salt together.
  3. In another bowl, whisk together the Greek yogurt, sugar, apple sauce, and egg until smooth.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in the diced apples gently.
Baking
  1. Pour the batter into muffin tins, filling each about 2/3 full.
  2. Bake for 20-25 minutes until golden brown.
  3. Let the muffins cool in the pan for a few minutes before moving them to a wire rack.
