Preparation
- Preheat your oven to 350°F (175°C).

- In another bowl, whisk together the Greek yogurt, sugar, apple sauce, and egg until smooth.
- Combine the wet and dry ingredients until just mixed.
- Fold in the diced apples gently.
Baking
- Pour the batter into muffin tins, filling each about 2/3 full.
- Bake for 20-25 minutes until golden brown.
- Let the muffins cool in the pan for a few minutes before moving them to a wire rack.
