Apple Cider Reduction
- Boil 2 cups of apple cider in a saucepan until it reduces to 1/2 cup (about 15-20 minutes). Let it cool.
Cheesecake Filling
- In a bowl, mix cold cream cheese, 3 tbsp sugar, and 1/2 tsp vanilla until smooth. Refrigerate.
Cookie Preparation
- Preheat the oven to 350°F (175°C).
- Whisk together flour, 2 1/2 tsp cinnamon, nutmeg, allspice, baking powder, baking soda, and salt in a bowl.
- In another bowl, cream the softened butter, brown sugar, and 1/4 cup sugar until fluffy.
- Add egg yolks, 2 tsp vanilla, and 2 tbsp apple cider reduction and mix well.
- Gradually add the dry ingredients to the butter mixture until combined.
Topping and Baking
- Mix 1/4 cup sugar, 1/4 tsp cinnamon, 1/8 tsp nutmeg, and a pinch of allspice for the spiced sugar.
- Brush cookie tops with melted butter and sprinkle with the spiced sugar.
- Bake the cookies for 10-12 minutes or until edges are golden but centers remain soft.
