Ingredients
  

For the Apple Cider Reduction
  • 2 cups apple cider Boil until reduced to 1/2 cup
For the Cheesecake Filling
  • 6 oz cream cheese, cold Must be cold for a smoother texture
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
For the Cookie Dough
  • 1 3/4 cups all-purpose flour
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction From the earlier step
For the Spiced Sugar Topping
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 1-2 tbsp salted butter, melted For brushing

Method
 

Apple Cider Reduction
  1. Boil 2 cups of apple cider in a saucepan until it reduces to 1/2 cup (about 15-20 minutes). Let it cool.
Cheesecake Filling
  1. In a bowl, mix cold cream cheese, 3 tbsp sugar, and 1/2 tsp vanilla until smooth. Refrigerate.
Cookie Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, 2 1/2 tsp cinnamon, nutmeg, allspice, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, cream the softened butter, brown sugar, and 1/4 cup sugar until fluffy.
  4. Add egg yolks, 2 tsp vanilla, and 2 tbsp apple cider reduction and mix well.
  5. Gradually add the dry ingredients to the butter mixture until combined.
Topping and Baking
  1. Mix 1/4 cup sugar, 1/4 tsp cinnamon, 1/8 tsp nutmeg, and a pinch of allspice for the spiced sugar.
  2. Brush cookie tops with melted butter and sprinkle with the spiced sugar.
  3. Bake the cookies for 10-12 minutes or until edges are golden but centers remain soft.
