Ingredients
  

For the Patties
  • 1.5 pounds ground beef Use lean ground beef for less fat.
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
For the Gravy
  • 1/4 cup all-purpose flour Can substitute with gluten-free flour or cornstarch slurry.
  • 2 cups beef broth Use low-sodium if desired.
  • 1 cup milk Whole or 2% is best; plant-based will thin the sauce.
  • 1/2 cup sour cream Can substitute with plain Greek yogurt.
  • 2 tablespoons butter, melted
For Serving
  • Mashed potatoes Optional, for serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, chopped onion, salt, black pepper, and garlic powder. Mix gently — do not overwork the meat. Shape into 6 to 8 oval patties.
  3. Heat a skillet over medium-high heat. Brown the patties 2 to 3 minutes per side until nicely seared. Remove patties to a plate and set aside.
Making the Gravy
  1. Reduce heat to medium. Add the flour to the skillet drippings and whisk constantly until the mixture is smooth and turns a light golden color.
  2. Gradually whisk in the beef broth and then the milk. Keep stirring until the gravy thickens, about 3 to 5 minutes.
  3. Remove the skillet from heat and stir in the sour cream and melted butter until smooth. Taste and adjust seasoning.
Baking
  1. Arrange the browned patties in a baking dish. Pour the gravy evenly over them.
  2. Bake for 20 to 25 minutes, until the gravy is bubbling and the patties are cooked through.
Serving
  1. Serve hot spooned over mashed potatoes, rice, or buttered noodles.

Notes

If your ground beef is very lean, a little olive oil in the skillet helps with browning. If you prefer a thicker gravy, use slightly less milk or simmer a minute longer.
